How long does it take to get back to previous fitness?

Typically 50-80% of the time you were off. If you were off 6 months, expect 3-5 months to return to previous levels. Muscle memory helps but cardiovascular fitness has to be rebuilt.

Should I test my FTP when coming back?

Yes, but don't compare it to your old numbers. Test after 2-3 weeks of easy riding to establish a current baseline, then retest every 6-8 weeks.
